Superfood? – You're probably thinking of blueberries, chia or spirulina. But not of black pudding. And yet it's true: fresh black pudding has been given this distinction! Because it's almost low carb. And it's the perfect blood cell cure. Especially when it comes from a family business like Freyberger. Our fresh black pudding and liver sausage are top quality from Uehlfelder Edelschwein.

How is fresh black pudding and liver sausage actually made?

Fresh black pudding is a masterpiece of the traditional butcher. For many centuries it has been a must on every meat platter. It is widespread throughout Europe and overseas. And every national cuisine has its own culinary side. At Freiberger, we dedicate all of our butchery skills to black pudding. Of course, we won't reveal the exact production process here, because the recipes for fresh black pudding and fresh liver sausage have been passed down from generation to generation in our family business since 1958. Just this much: Fresh black pudding contains pork from the cheek, rind, onions and blood. And of course lots of spices, which are the responsibility of spice sommelier Sven Freyberger.

Why is fresh black pudding considered a superfood?

In spring in particular, many people develop a craving for iron-rich foods. The body has a mind of its own. Fresh black pudding is pretty much the best (and tastiest!) way to replenish iron stores. Fresh blood sausage - a traditional sausage for which every region has developed ideas. And its own names. Presswurst, Rotwurst, Speckwurst, Grützwurst: an entire geographic map could be created with this speciality. Did you know that even in Trinidad and Tobago fried blood sausage - black pudding - is on the menu? Sweet potatoes, chilies, garlic and thyme are contained in the sausage mixture. But back to Germany. Freyberger's fresh blood and liver sausage is an integral ingredient of heaven and earth. Or Himmel un Ääd, as the Rhinelander says. In some regions fresh liver sausage is fried, in others blood sausage. Of course, potatoes ('Erdäpfel') are served with it, browned in the pan or as a puree, and apples (so that heaven gets its due), fried with the potatoes or as a mash. You remove the fresh blood sausage from the skin. Cut into slices, roll in flour, fry until hot. A perfect combination. Heaven on earth.

Wie immer perfekt

Schnelle pünktliche Lieferung mit hervorragenden Fleisch- und Wurstprodukten. Bestelle schon lange und immer wieder. Vor Weihnachten werden es noch einmal Bratwürste, die sich auf den Weg nach Bonn machen müssen. Es soll Weihnachten Saure Zipfel als kulinarischen Genuss geben.

Blut- und Leberwurst

Die Blutwurst war sehr lecker. Die Leberwurst fand ich leider sehr unterwürzt. Davon abgesehen war sie wirklich kurz nach dem auspacken aus der Vakuumfolie schmierig und der Geruch war sehr fragwürdig.

Zwar nicht ganz so kalorienarm wie ein Salatblatt aber mit einem guten Sauerkraut (die Elsässer würde zum kochen Champagner verwenden) ein himmlischer Genuss...
