We consciously source our veal locally to guarantee you the best quality. Calves processed into veal typically come from dairy production. They are slaughtered approximately three to seven months after birth, as they are considered by-products. In order for the cows to produce enough milk, they must give birth regularly. If the young animals are not needed for milk production, they are used for meat production. Therefore, predominantly male animals are slaughtered. Traditionally, the world-famous Wiener Schnitzel is made from the topside of veal. High-quality meat generally doesn't need to be pounded before roasting.
