Buy Bratwurst from Freyberger - coarse, fine and simply delicious

Bratwurst comes in numerous variations. It starts with the meat. Whether pork, beef, venison, chicken, or lamb, the possibilities are endless. But it's not just the meat that matters, but also the way it's made. There are various varieties of bratwurst: Rostbratwurst, Nuremberg bratwurst, Franconian bratwurst, and even a distinction between coarse and fine bratwurst.

Difference between coarse and fine bratwurst

The fine bratwurst differs from the coarse bratwurst in the degree of mincing of the bratwurst meat. The bratwurst meat or meat meat is the sausage filling, which is made from minced meat and various spices. The meat is ground through a meat grinder. Depending on the settings of the meat grinder, the bratwurst can be made as a coarse or fine bratwurst. Medium-coarse is also possible. A typical coarse bratwurst, for example, is the Fränkische, but this varies depending on the region in Franconia. A Fränkische bratwurst can just as easily be a fine bratwurst. But Thuringian Rostbratwurst and Palatinate bratwurst are also considered coarse bratwurst. The best-known medium-coarse bratwurst is the Nürnberger Rostbratwurst. Fine bratwursts include the Schweinsbratwurst (Silesian bratwurst), the Coburger bratwurst, and the Rhenish bratwurst. They are usually made from pork, but they can also be made from beef, venison, chicken, or lamb.

Freyberger's Franconian Bratwurst

The Franconian Bratwurst is at least as well-known as the Nuremberg Rostbratwurst. Whether at a castle festival, church fair, or in a beer cellar, it can be found everywhere. But it is also known outside of the region and beyond Germany and is a classic, international dish, keyword: bratwurst with sauerkraut. Here, the Franconian Bratwurst is always available. Whether as a classic evening snack or at a barbecue, Freyberger's Bratwurst is a must. You can serve it as a side dish simply with sauerkraut, dip it in mustard, or eat it straight away. Whether fried, grilled, or boiled (Saure Zipfel), the Franconian Bratwurst from Freyberger always works. It is available in many variations, including: Franconian Italian, Freybier Bratwurst, Beef Bratwurst, Ibérico Bratwurst, White Bratwurst, and of course, the classic Nuremberg Bratwurst and Griller Bratwurst. The Franconian Bratwurst can be either a coarse or a fine bratwurst. You can order the bratwurst from us online or buy it in the store.

Nuremberg Rostbratwurst

The Nuremberg Bratwurst, better known as "3 im Weckla" (three in a roll), is hard to ignore when walking through the city of Nuremberg. The Nuremberg Rostbratwurst can be found everywhere in Nuremberg and is also very popular outside of Germany. This is largely thanks to the Nuremberg Christkindlesmarkt, arguably the most famous Christmas market in the world. The Nuremberg Rostbratwurst is a medium-sized bratwurst and is traditionally served with sauerkraut or in a bread roll with mustard. The Nuremberg Bratwurst is perfect for grilling and frying. But it can also be served as a "Sauer Zipfel" (sour sausage). Nuremberg Rostbratwursts are always available at Freyberger and are always in stock. You can easily order them online or buy them in-store. There are no other variations of Nuremberg Bratwurst, as they are always made according to the original recipe. The Nuremberg Rostbratwurst is therefore always a medium-sized bratwurst.

Frequent questions about bratwurst

Heat the grill or pan to a maximum of 160 °C. Pat the sausages dry beforehand – in a non-stick pan, use a little oil or fat to prevent the skin from sticking. Brown evenly on all sides, then reduce the temperature and let the sausages simmer at half heat – rolling regularly. On the grill, place directly over the embers, brown evenly, then move to a cooler spot. For both methods: patience is the most important tip from the world champion.

Over 20 varieties – from classic Franconian and Nuremberg bratwursts to specialties such as Iberico or lamb bratwurst. The differences lie in the coarseness, the type of meat, and the spices. As a master butcher, Freyberger consistently relies on selected meat qualities and proven recipes.

In addition to the classics, Freyberger surprises with varieties such as the Käsespätzle sausage or the Montreal Maple BBQ sausage – Franconian craft tradition meets modern flavor ideas. Everything from our own production, without compromise on meat quality or spices. The creative specialties can be ordered directly here in the online shop and are delivered fresh to your home.

Coarse bratwurst has more meat texture, is spicier, and is ideal for grilling. Fine bratwursts, like the Nuremberg sausage, have a more delicate texture and are better suited for pan-frying with sauerkraut and mustard. Rule of thumb: coarse = grill, fine = pan.

On the charcoal grill or in the pan, served with sauerkraut, mustard, and farmhouse bread. In Nuremberg, they are a cult favorite as "Drei im Weckla" (three in a bun). Horseradish and potato salad are also an essential part of it in Franconia.

Fresh bratwurst will keep for 2-3 days in the refrigerator (2-4°C). Frozen and vacuum-sealed, it will keep for up to 3 months. The best way to thaw it is slowly overnight in the refrigerator – this way the quality is maintained.

As a master butcher and world champion, Freyberger's focus is clearly on meat quality – vegan alternatives are not part of their product range. However, for those who don't eat meat, there's the Grill Cheese Sausage– the vegetarian alternative that's just as convincing on the grill.

Classic: medium-hot mustard, sauerkraut, potato salad, and farmer's bread. A cool lager pairs well with coarse grilled sausages, while a Franconian wine suits fine Nuremberg sausages. For creative varieties like Montreal Maple BBQ, coleslaw or chimichurri are a good choice.
