Black Forest ham

an original Black Forest specialty

Unfortunately, we cannot produce our Black Forest ham ourselves, as Black Forest ham is a geographically protected designation. This means that this Black Forest specialty can only be produced in a very narrow regional area - the Black Forest from Pforzheim in the north to Lörrach near the Swiss border. You can buy our Black Forest ham from our partner Adler Schwarzwald.

What makes the ham from the Black Forest so special

In addition to the geographical protection of the Black Forest ham, the taste is something very special. A strong smoky note is accompanied by a pleasant salt content and is characteristic of the full-bodied and hearty taste. We cut the Black Forest ham by hand into wafer-thin slices for you, so the full range of its culinary qualities can be revealed.

production of the Black Forest specialty
Our supplier Adler also has the highest standards for the quality of its homemade hams, and the live pig naturally plays a crucial role in this. That is why Adler only uses the best Qualivo pork for our premium ham.

keeping of pigs
The animals live on straw with plenty of space and receive a special herbal feed mixture that is primarily tailored to the well-being and thus the later meat quality of the animals.

finishing of the ham
The Qualivo pork ham cuts from the underside and rump are rubbed by hand with a special sea salt and herb mixture. The Black Forest hams are then aged in large barrels for several weeks. After this first step, the Black Forest ham is dried and repeatedly gently smoked over spruce and fir wood in cold smoke.

Enjoying Black Forest Ham

The cold-smoked and air-cured original Black Forest ham can be eaten in a variety of ways. Either sliced very thinly on a crispy baked buttered sourdough bread. Or in one piece and then cut on the snack board and chopped into small pieces to make a delicious bread.
Black Forest ham is also very suitable for dishes. For example, wholemeal ham noodles can be prepared with heavily smoked ham (as an alternative to our cooked ham ), giving this speciality a special touch. Buy our Black Forest ham in the version you want, thinly sliced or in one piece.
