Each region has its own version of the Franconian Bratwurst, including: Ansbacher Bratwurst (rough filling, approx. 18 cm long to 3 cm thick, in a strip), Bayreuther Bratwurst (about 20 cm thick, very finely chopped), Coburger Bratwurst (roughly minced with at least 25% veal or beef and egg as a binding agent), Würzburger Bratwurst (wine bratwurst, folded bratwurst) and Hofer Bratwurst (long and thin, mostly fine sausage meat with a little beef). As you can see, Freyberger's Franconian sausage cannot be classified in any of the above categories. Fritz Freyberger made his own creations over 60 years ago and wanted to create the perfect Franconian Bratwurst. Incidentally, at the annual Franconian Bratwurst Summit in Pegnitz, the best master butchers in the country compete for the prize for the best sausage of the year.

In Franconia, the Mettigel is called a minced hedgehog. As you can see, our Franconian sausage is not only delicious, but can also be enjoyed in many different ways.
