Our Franconian Bratwurst with marjoram from Uehlfleder Edelschwein is a ribbon bratwurst. It is ideal for the pan and the grill. The fine marjoram note gives our Franconian Bratwurst a particularly delicious taste. Of course, we prepare it fresh for you every day.

Franconian Bratwurst: Ideal for pan and grill

Our Franconian bratwurst with marjoram is ideal for any grill, whether charcoal, gas or even electric. It can of course also be fried on the stove, in a good pan, floating in fat. Our meat sommelier recommends Stebers clarified butter for frying in the pan.

Bratwurst variety for every taste

We offer our customers a huge selection of bratwurst variations . Whether it's our Franconian Italians, refined with wild garlic, Peppadew, asparagus or red beer: And these are just the standard variations in our weekend display during the barbecue season. During the week we offer our bratwurst meat in large, coarse and Nuremberg grilled sausages. In the barbecue season we let our creativity run wild: every month our best creations are packaged in an appealing dish by the Globo Restaurant , which everyone should try.

How to prepare our Franconian sausage properly

In contrast to a Nuremberg bratwurst, our coarse Franconian sausages are not as easy to grill and fry. Because they are larger, the temperature in the pan or on the grill should not be too high, otherwise they will burn on the outside and be completely raw on the inside. Also, make sure that you always take the bratwurst out of the fridge in good time, because you don't want it to end up in the pan or on the grill ice cold - and of course, you definitely shouldn't put it frozen.

Freyberger's coarse bratwurst has been seasoned according to our own secret recipe for generations. But the decisive factor for the top quality of the bratwurst is not only the right seasoning, but also the quality of the meat. This determines whether it is a good, outstanding, top-notch or special bratwurst. That is why, in addition to our Uehlfelder Edelschwein, we also use special breeds to make our coarse Franconian bratwurst. We regularly process Mangalitza and Iberico pigs. That is what makes these bratwursts so special.

Each region has its own version of the Franconian Bratwurst, including: Ansbacher Bratwurst (rough filling, approx. 18 cm long to 3 cm thick, in a strip), Bayreuther Bratwurst (about 20 cm thick, very finely chopped), Coburger Bratwurst (roughly minced with at least 25% veal or beef and egg as a binding agent), Würzburger Bratwurst (wine bratwurst, folded bratwurst) and Hofer Bratwurst (long and thin, mostly fine sausage meat with a little beef). As you can see, Freyberger's Franconian sausage cannot be classified in any of the above categories. Fritz Freyberger made his own creations over 60 years ago and wanted to create the perfect Franconian Bratwurst. Incidentally, at the annual Franconian Bratwurst Summit in Pegnitz, the best master butchers in the country compete for the prize for the best sausage of the year.

The sausage mince is the filling that is stuffed into the pork loin. This Franconian staple food becomes a highlight at every snack or evening meal with onions and freshly baked black bread. In Franconia, the Mettigel is called a minced hedgehog. As you can see, our Franconian sausage is not only delicious, but can also be enjoyed in many different ways.

Gigantisch

Vor ca. 60 Jahren habe ich meine Geburtsstadt verlassen, wurde noch lange Zeit mit den guten Wurstwaren versorgt aber schon lange her. Endlich wieder eine Nürnberger Bratwurst - wie vor 60 Jahren. Schmeckt fantastisch - danke dafür.

Ich bin seit 40Jahren Koch und hatte 27 Jahre ein erfolgreiches Restaurant. Doch die Bratwurst die mein Vater(Metzgermeister) machte habe ich nirgens so bekommen(und auch selber nicht so hinbekommen) doch jetzt bin ich sehr nah dran an diesem, für mich unvergesslichem Geschmackserlebnis(wie auch schon bei der Fränkischen fein und Nürnberger Rostbratwurst) . Ich bedanke mich bei Euch für dieses Erlebnis und freue mich schon auf die nächsten Bestellung.
