Our beef leg slice will keep for at least 5 days after it arrives at your premises or after it is picked up, at a maximum temperature of 6°C.
For optimal storage, we recommend storing between 0 and 4 °C.

We only use heifers and ox meat. Never young bulls. Our cattle are slaughtered in the butcher's slaughterhouse in Fürth-Burgfarrnbach and come from farmers in the slaughterhouse's catchment area, mostly from the Nuremberg region. We sometimes even have personal contact with our fatteners in order to continually improve the quality of the meat and the way our animals are kept.

Beef shank is a tasty alternative to veal and an absolute highlight in the kitchen. But what is the best way to prepare this aromatic piece of meat? And which recipe contains the right preparation method to bring out the special taste of this tasty cut? Beef shank can be cooked to make a meat broth, for example. Or braised to make a tasty Osso Buco.

In our butcher's shop, several cattle are cut up every week. This is important to us. It is the only way we can say exactly where our meat comes from. It also gives us the opportunity to carry out the entire maturing process properly. Most of our beef is wet-aged. What is special about us is that we dry-age our animals for at least seven days after slaughter and before vacuum maturing. This gives the so-called rump cap a special meaty aroma and makes it tender. You always get shins from us as fresh as possible. Because of the bone marrow, the shin is very sensitive.
