We only use heifers and ox meat. Never young bulls. Our cattle are slaughtered in the butcher's slaughterhouse in Fürth-Burgfarrnbach and come from farmers in the slaughterhouse's catchment area, mostly from the Nuremberg region. We sometimes even have personal contact with our fatteners in order to continually improve the quality of the meat and the way our animals are kept.

      In our butcher shop, several cattle are butchered every week. This is important to us. It's the only way we can tell exactly where our meat comes from. It also allows us to properly complete the entire aging process. Most of our beef is wet-aged. What's special about us is that we dry-age our animals for at least seven days after slaughter and before vacuum aging. This gives the rump a special meaty flavor and makes it tender. You always receive shanks from us as fresh as possible. Because of the bone marrow, shanks are very delicate.
