      Wild boars are fortunately very rare in Middle Franconia these days—or at least they're very clever. That's why we don't always have wild boar, or our wild boar goulash, on offer. In addition, we only buy animals in their skin, which we then butcher ourselves. This way, we can always guarantee our customers impeccable quality and freshness.

      Wild Boar Goulash: Tasty and Healthy

      Venison is one of the healthiest types of meat. Wild boars live in the wild and feed on what they can find on the forest floors. This is why the meat of these wild animals is of such excellent quality.
      We avoid sourcing venison from driven hunts, as this places immense stress on the animals. This can affect the quality of the meat, so our hunters rely on stand hunting. As soon as the animals are shot, they are butchered immediately.
      For our wild boar goulash, we use meat from the shoulder and leg. When prepared correctly, it's wonderfully tender and, depending on the season, spicier (summer), fruitier (autumn), or milder (winter). Wild boar, with the exception of young boars and wild boars, are no longer protected year-round.
      We also source our deer and fawns exclusively from Franconia. We work with hunters based in Nuremberg and regularly travel to the game reserves in the Grafenwöhr region to source ever-increasing quantities of venison. This is the only way we can offer you wild boar goulash on a regular basis.
