To celebrate Carnival, the Freyberger butcher shop is creating a luxury Berliner doughnut with Wagyu cream at a special price.
Carnival culture isn't limited to Cologne. In Nuremberg, too, there are inventive butchers who constantly come up with new ideas to celebrate Carnival. One such is Metzgerei Freyberger. Last year, customers enjoyed the bacon jam doughnut, but this year the Freybergers are taking it up a notch.
Doughnuts with Wagyu Cream
Traditionally, doughnuts are filled with rosehip jam. This is the well-known standard. But chocolate and buttercream fillings are also common variations of the Carnival delicacy.
"I wondered if Wagyu fat could also be used," explains Dirk Freyberger, owner of Metzgerei Freyberger. Wagyu fat, also known as Wagyu Beef Tallow, is rendered beef fat from a Wagyu cattle. It is very suitable for frying all kinds of dishes and also has another advantage.
"Wagyu fat has a very unique note that can be prepared both sweet and savory," reveals the master butcher. For this reason, Dirk decides to develop a cream for a doughnut from it. "The special texture and unique note give the filling that certain kick," adds Freyberger.
Especially Wagyu is enjoying increasing popularity among BBQ enthusiasts. However, its availability differs from conventional beef. "Wagyu is something special," says the owner.
In contrast to last year, the doughnuts are sweet. The filling consists of Wagyu fat, strawberry jam and vanilla sugar, as well as egg white. Here is a video about it.

The Cost of the Luxury Doughnut
The Wagyu doughnuts are available only from February 13th to 16th, 2026, by pre-order and for pick-up at the branches of Metzgerei Freyberger. However, customers can only pre-order the luxury doughnuts until February 11th of this year. Anyone who misses this deadline will miss out on this specialty.
The doughnut costs 1.90 EUR, and if you order a box of six doughnuts, you'll receive a bulk discount and only pay 10.00 EUR. "Honestly, we didn't know if it would even taste good, but we were completely thrilled," Dirk reveals.
The doughnuts are available for pre-order now. However, they will not be a long-term part of the assortment. So, if you want to try this luxury specialty, you should order quickly online or at the branches.
