How does the course work?

After a brief welcome and introduction to the world of Wagyu, the course begins with a theoretical and sensory introduction: What makes genuine Wagyu so special, how to recognize quality and marbling, and what are the differences between Japanese, Australian, and regional meats? The meat sommelier imparts basic knowledge about origin, breeding, and aging, thus laying the foundation for the subsequent tasting.

In the practical part, the individual courses of the menu are prepared and tasted directly. The focus is on the preparation of various Wagyu cuts – from steak tartare to burgers to steak. The expert demonstrates step by step how temperature, cooking time, and resting time influence the result and how the unique flavor develops. There are also explanations of suitable side dishes and the flavor gradations of the different regions of origin. The evening concludes with dessert: caramelized peach with chocolate marshmallows, a sweet conclusion to an exclusive barbecue event.
