Fleischküchle - regionally different, popular everywhere
Easy preparation in pan and oven
Preparation begins with choosing the meat. Classic meatballs are made from a mix of minced meat, i.e. half pork , half beef . 500g of minced meat is an ideal amount for several portions. You can also make the meatballs from pure minced beef. Other ingredients you will need are bread rolls, onions, eggs , milk and spices . After you have put your minced meat in a bowl, you need to cut the onion and bread rolls into small cubes and add them. Then you crack the eggs and add them to the bowl. Now add the milk. The meatballs will be especially flavorful if you season the minced meat mixture with mustard , finely chopped parsley, salt and pepper. Then you knead the mixture until it reaches a smooth consistency. You can then divide it into equal portions and shape these into meatballs. This works best with moistened hands. Now heat some fat in a large pan. We recommend using lard or clarified butter , but beef fat is also excellent. Now add the meatballs to the pan and fry them over medium heat for 3 to 5 minutes on each side, until golden brown and crispy. Once the meatballs are cooked and full of subtle roasted flavors, place them on a baking sheet and bake them in the oven at 160°C for about 10 minutes to finish cooking evenly.
Classic meatballs - extremely versatile
This simple meatball recipe is just a basic recipe and can be easily adapted. Depending on your taste, you can season the meatballs with marjoram, paprika, or nutmeg, for example. In some regions, the meatballs are also coated in breadcrumbs before frying to achieve an especially crispy crust. Instead of mixed ground meat, you can also use pure ground beef or even lamb .
You can also vary the size: If you're making smaller meatballs, for example, you can add a lot more to the pan at once. If you prefer low-fat meatballs, you can also cook them in the oven.
Traditionally, these meatballs are often served hot with potato salad, but they also taste delicious cold with a slice of bread.
