How do you prepare a goose for Christmas?

In this country, the goose is traditionally stuffed at Christmas and served with red cabbage and dumplings. Whether you prepare a whole goose or just parts, such as goose leg or goose breast, depends on the size of the Christmas party. For larger groups, we recommend a whole animal, as this is the epitome of the festive meal. Goose leg and/or goose breast, on the other hand, are suitable for smaller parties or in case the guests prefer one of the two parts.

Free-range goose from the region: A goose at Christmas is a must in many German households. It is as much a part of Christmas as the Christmas tree and presents. Eating a goose at Christmas has a long tradition in this country. The origin of this festive meal goes back to Saint Martin (316/17 - 397). On his commemoration day on November 11th, roast goose was often served, as the subsequent Advent period used to have the character of Lent. This ended with midnight mass. In addition to this Christian tradition, growing prosperity during industrialization also played a role. The far more festive goose replaced roast pork ("Mettensau") at Christmas. But there are also other legends that explain the origin. In Great Britain, for example, Queen Elizabeth I is said to have eaten roast goose when the news of the victory of the Spanish Armada (1588) arrived. Since this was at Christmas time, she declared the goose a festive meal at Christmas.

Preparing a whole goose for Christmas takes a certain amount of time. With larger animals, handling the free-range goose is not quite as easy due to its gross weight of around 4.5 kilograms. There is also the question of whether a goose roaster is available. This is why many customers have their Christmas goose ready to roast with us. This means they can concentrate on the side dishes and enjoy Christmas Day in a relaxed manner. If you want to eat a goose before Christmas, simply choose a date during Advent.

This means that each free-range goose has at least four square meters of space to roam. In free-range farming, ten square meters or unlimited space per goose is guaranteed. Die Gans hat unsere Erwartungen übertroffen. Die Metzgerei ist wohl eine der letzten Institutionen hier in Nürnberg, die perfekte Ware anbietet. Das merkt man auch an der belebten Verkaufsfläche. Top und immer wieder gerne, wir sind sogar extra von der anderen Seite der Stadt zu diesem Metzgerei gefahren, um unseren Weihnachtsgans zu beschaffen. Auch die anderen Dinge, die wir dann noch mitgenommen haben. Nebenbei waren hervorragend.
