How do you prepare a goose for Christmas?

In Germany, the goose is traditionally stuffed at Christmas and served with red cabbage and dumplings. Whether you prepare a whole goose or just parts, such as the goose leg or goose breast, depends on the size of your Christmas party. For larger groups, we recommend a whole goose, as this is the epitome of the festive meal. Goose leg and/or goose breast, on the other hand, are suitable for smaller parties or if guests prefer one of the two parts.

A locally raised free-range goose: A goose at Christmas is a must in many German households. It's as much a part of Christmas as the Christmas tree and presents. Eating goose at Christmas has a long tradition in this country. The origin of this festive meal dates back to Saint Martin (316/17–397). On his feast day on November 11th, roast goose was often served, as the subsequent Advent season used to have the character of a fasting period. This ended with midnight mass. In addition to this Christian tradition, the growing prosperity of industrialization also played a role. Thus, the far more festive goose replaced roast pork ("Mettensau") at Christmas. There are also other legends that explain the origin. In Great Britain, for example, Queen Elizabeth I is said to have eaten roast goose when she received news of the victory of the Spanish Armada (1588). Since this was during the Christmas season, she declared the goose a festive meal at Christmas.

Preparing a whole goose for Christmas takes some time. With larger birds, handling a free-range goose isn't quite as easy due to its raw weight of around 4.5 kilograms. Another question is whether a goose roaster is available. Therefore, many customers have their Christmas goose roasted ready-to-eat by us. This allows them to concentrate on the side dishes and enjoy the Christmas holiday in a relaxed manner. If you'd like to enjoy a goose before Christmas, simply choose a date during Advent.

Why a German free-range goose?

A German free-range goose is the right choice in terms of animal welfare. These geese are kept in a species-appropriate manner. This means that each free-range goose has at least four square meters of outdoor space. Farm-based free-range systems guarantee even ten square meters per goose, or even unlimited outdoor space. Furthermore, these legally defined systems also specify the maximum number of birds allowed to live in one pen.
