      If there's one thing that excites a Franconian, it's the perfectly roasted, crispy crust of an original Franconian Schäufele (shoulder shoulder). And that's also the greatest challenge in preparing such a fine roast: the crust. A Schäufele is no ordinary roast with a crust from the shoulder, and certainly not from the leg. No, it is cut from the middle section of the shoulder, the best part, with the entire shoulder bone. Anyone who buys a Franconian Schäufele knows that the shoulder bone is the secret. It keeps the meat moist until it falls off the bone.

      Roasting Franconian Schäufele in the oven

      No matter which roast you are using: If you want to roast a rind until it is crisp and crispy, the following applies: at the beginning of the cooking process, you need moist heat! This can be somewhat lower, for example, between 130 and 150 °C in the oven. There are various approaches here, such as cooking the Franconian Schäufele with the rind facing down in a pot for 30 minutes. However, we recommend this method: At the beginning, place the cut rind facing down in the roasting pan, with plenty of beer in the roasting pan. One thing to note here: DO NOT sear the crust.       Our Franconian pigs are slaughtered by Hans Rössner at the butcher shop of the same name in Uehlfeld. He is the cousin of senior partner Reiner Freyberger and sources the animals from the immediate vicinity of the butcher shop, a maximum of 30 minutes' drive from the farm. The exceptional quality of the meat is not only due to the animals' ample space, the short transport routes, the slower and longer fattening of the animals, and the home-grown, GMO-free feed.       Frequently asked questions about our Franconian Schäufele

      Das Schäufele wird klassisch im Ofen zubereitet. Bei 160-180°C etwa 2-3 Stunden garen, dabei regelmäßig mit Bratenfond übergießen. Die letzten 20 Minuten bei hoher Temperatur für eine knusprige Kruste.

      Das Schweinefleisch ist bereits mit Salz, Kümmel und einer traditionellen Gewürzmischung vorbereitet. Die Schwarte ist rautenförmig eingeschnitten, damit sie beim Braten schön knusprig wird.

      Plane etwa 2,5 bis 3 Stunden Garzeit ein. Pro 500g Fleisch rechnet man ungefähr 45 Minuten bei mittlerer Hitze, plus Zeit zum Anbraten und für die knusprige Kruste.

      Im Kühlschrank bei maximal 4°C aufbewahren und innerhalb von 2-3 Tagen zubereiten. Das Schäufele kann auch problemlos eingefroren werden - dann hält es sich bis zu 6 Monate.

      Rechne mit etwa 300-400g pro Person bei normalem Appetit. Ein ganzes Schäufele wiegt meist zwischen 1,2 und 1,8 kg und reicht damit für 3-4 Personen als Hauptgang.

      Ja, das geht hervorragend! Bei indirekter Hitze etwa 2-3 Stunden grillen. Eine Wasserschale unter dem Rost sorgt für Feuchtigkeit. Die Schwarte wird dabei besonders knusprig.

      Das Schäufele stammt aus der flachen Schweineschulter mit dem charakteristischen Schulterknochen. Die Haxe ist dagegen der Unterschenkel vom Schwein und hat eine rundere Form mit mehr Bindegewebe.

      Traditionell wird fränkisches Schäufele mit Kartoffelklößen und Kraut serviert – meist Sauerkraut oder Blaukraut – dazu eine kräftige Braten- bzw. Dunkelbiersoße aus dem Fond.
