What our experts say

Tip from our butcher Pascal Pascal

Our small salami rings can hold their own against Italian salamis, perhaps even more so. Without the noble mold, they have a slightly different flavor profile. My kids are absolutely crazy about them because of that.

Rohwurst im Fokus

Gipfelstürmer

When you think of raw sausage, you usually think of salami. But the term raw sausage encompasses so much more. In addition to the sliceable raw sausage, also called salami, there is also the spreadable raw sausage. Examples of this are ourfineandroughMettwurst, but also ouronion sausage. There's also the category of raw sausages, and we offer a wide selection here as well. Our Polish sausages with garlic, smoked sausages, calf-biters, and our Saxon sausage fall into this category. Our Gipfelstürmer sausages are very firm and can be easily sliced and enjoyed.

Lagerung und Aufbewahrung der Gipfelstürmer

Raw sausage, in general, is one of the least problematic sausage products in terms of shelf life. This is due to two factors for all sausages. First, the addition of nitrite curing salt. The preservative nitrite reliably inhibits bacterial growth. Second, the relatively low aw value further guarantees good shelf life. Therefore, raw sausages are divided into two main groups.

Streichfähige Rohwurst

These spreadable raw sausages are not intended for immediate consumption, nor for long-term storage. This is stated in the guidelines for meat and meat products. Translated, this means that these spreadable sausages, such asfine,semi-coarseandroughMettwurst, or our onion-based Mettwurst, does not have to be eaten within a day, as is the case with minced meat products (bratwurst mince), for example. But it cannot be stored for several weeks either. Our smokedBratwursts,Fire SnakeorPolishand Saxon sausages fall into this group when delivered to our customers. However, if these raw sausages are thoroughly dried, they are ideal for long-term storage.
