Bratwurst mince is the name given to the stuffing that is put into the pork loin. Our Franconian staple food is combined with onions and freshly baked black bread to create a delicious treat for the whole family. Incidentally, here in Franconia we have something called the Gehäckigel. It is our version of the German classic Mettigel.

Each region has its own version of the Franconian Bratwurst, including the Ansbacher Bratwurst (rough filling, approx. 18 cm long to 3 cm thick, in a strip), Bayreuther Bratwurst (about 20 cm thick, very finely chopped), Coburger Bratwurst (roughly minced with at least 25% veal or beef and egg as a binding agent), Würzburger Bratwurst (wine bratwurst, folded bratwurst) and the Hofer Bratwurst (long and thin, mostly fine sausage meat with a little beef). As you can see, Freyberger's Franconian sausage cannot be classified in any of the above categories. Fritz Freyberger has been making his own creations for over 60 years and has turned his very own ideas into a delicious treat.
