Our coarse Franconian bratwurst is a so-called Bändel bratwurst, which is ideal for the pan and the grill. We produce it fresh for sale every day so that you always get the best quality.

Our coarse bratwurst is ideal for any grill, whether charcoal, gas or even electric. Our coarse Franconian bratwurst can of course also be fried on the stove in a good pan floating in fat. Stebers clarified butter is ideal for frying in a pan.

Bratwurst variety: Something for every taste

We offer our customers a huge selection of bratwurst variations. Whether it's our Franconian Italians, refined with wild garlic, Peppadew, asparagus or red beer, which we offer in our weekend display during the barbecue season. During the week we offer our bratwurst meat in large, coarse and Nuremberg bratwurst. In the barbecue season we let our creativity run wild: every month our best creations are packaged in an appealing dish by the Globo Restaurant, which everyone should try.

How to prepare our coarse Franconian sausage properly

In contrast to the classic Nuremberg Bratwurst, the coarse Franconian Bratwurst is generally a little more difficult to handle. But don't worry, preparing it is not rocket science. Since it is larger, you should just make sure that the temperature in the pan or on the grill is not too high. Otherwise you run the risk of it burning black on the outside and remaining raw on the inside. Also, always take your coarse Franconian out of the fridge in good time, because no fresh Bratwurst feels comfortable if it ends up on the grill ice cold.

Bratwurst mince is the name given to the stuffing that is put into the pork loin. Our Franconian staple food is combined with onions and freshly baked black bread to create a delicious treat for the whole family. Incidentally, here in Franconia we have something called the Gehäckigel. It is our version of the German classic Mettigel.

Each region has its own version of the Franconian Bratwurst, including the Ansbacher Bratwurst (rough filling, approx. 18 cm long to 3 cm thick, in a strip), Bayreuther Bratwurst (about 20 cm thick, very finely chopped), Coburger Bratwurst (roughly minced with at least 25% veal or beef and egg as a binding agent), Würzburger Bratwurst (wine bratwurst, folded bratwurst) and the Hofer Bratwurst (long and thin, mostly fine sausage meat with a little beef). As you can see, Freyberger's Franconian sausage cannot be classified in any of the above categories. Fritz Freyberger has been making his own creations for over 60 years and has turned his very own ideas into a delicious treat.

Als Metzgerssohn rund um zufrieden

Ich bin seit 40Jahren Koch und hatte 27 Jahre ein erfolgreiches Restaurant. Doch die Bratwurst die mein Vater(Metzgermeister) machte habe ich nirgens so bekommen(und auch selber nicht so hinbekommen) doch jetzt bin ich sehr nah dran an diesem, für mich unvergesslichem Geschmackserlebnis. Ich bedanke mich bei Euch für dieses Erlebnis und freue mich schon auf die nächsten Bestellung.
