What our experts say

Tip from our butcher

You can recognize a good, coarse Franconian sausage from the first bite – the hearty texture and intense marjoram flavor are unmistakable.

In Focus

Freyberger's coarse Franconian Bratwurst

Our coarse Franconian bratwurst is a so-called "Bändel" bratwurst, ideal for pan-frying and grilling. We produce it fresh for sale every day, so you always receive the best quality.

How often to grill coarse Franconian sausages?

The coarse Franconian bratwurst unfolds its full aroma over medium heat – turn it every 2-3 minutes for even browning. When grilling, you should not prick the sausage so that the juices are retained. For particularly intense smoky flavors, you can use beech wood chips. The coarse texture of the sausage tolerates longer grilling times well without drying out. Marjoram and the other spices develop their characteristic aroma through the heat. Fresh bratwurst can be stored in the refrigerator for about 3-4 days, frozen for up to three months. As an alternative to grilling, frying in a pan with a little butter is also suitable. For variety, try our smoked bratwurst, which already have an intense smoky flavor and are perfect for your next barbecue.

The Art of Grilling

At our butcher shop, we firmly believe that good food brings people together. When the aroma of grilled bratwurst fills the garden and family and friends gather around the grill, the most beautiful moments are created. Each of our coarse Franconian sausages is still made today according to traditional recipes – without flavor enhancers, but with great attention to detail.

The craftsmanship of our master butchers is evident in every single product. From the careful selection of pork to the perfect seasoning with marjoram and other natural spices – here tradition meets the highest quality. If you want to delve even deeper into the secrets of the perfect bratwurst, we recommend our technical course "How to Bratwurst", where you learn directly from our professionals.

Frequently asked questions about Coarse Franconian Sausage

The coarse bratwurst has a hearty texture due to coarsely ground pork. You can distinctly taste the individual pieces of meat, which makes it chewier.

Marjoram is the main spice, along with table salt, black pepper and often mace. We only use natural spices without the flavor enhancer E621.

Fresh bratwurst will keep for 3-4 days in the refrigerator at a maximum of 4°C. Frozen, it will stay fresh for up to three months.

The coarse Franconian sausage is 15-20 cm long and filled in a thicker natural casing. Nuremberg sausages are significantly smaller and finer.

Yes, fry over medium heat with a little butter for 12-15 minutes. The coarse texture makes the sausage particularly juicy.

Our bratwursts are available in three pack sizes: 5-pack, 10-pack, or 25-pack.

Classic with sauerkraut and farmhouse bread. Its robust texture harmonizes perfectly with hearty sides like potato salad or spicy mustard.

sausage mince

Bratwurst mince is the name given to the stuffing that is put into the pork loin. Our Franconian staple food is combined with onions and freshly baked black bread to create a delicious treat for the whole family. Incidentally, here in Franconia we have something called the Gehäckigel. It is our version of the German classic Mettigel.

variety of Franconian Bratwurst

Each region has its own version of the Franconian Bratwurst, including the Ansbacher Bratwurst (rough filling, approx. 18 cm long to 3 cm thick, in a strip), Bayreuther Bratwurst (about 20 cm thick, very finely chopped), Coburger Bratwurst (roughly minced with at least 25% veal or beef and egg as a binding agent), Würzburger Bratwurst (wine bratwurst, folded bratwurst) and the Hofer Bratwurst (long and thin, mostly fine sausage meat with a little beef). As you can see, Freyberger's Franconian sausage cannot be classified in any of the above categories. Fritz Freyberger has been making his own creations for over 60 years and has turned his very own ideas into a delicious treat.
