Preparation instructions (shoulder):

  1. Remove the meat and sauce from the refrigerator about 1 hour before preparation.
  2. Preheat the oven to 140 °C fan-assisted (160 °C indirect heat on the grill)
  3. Pour the pan juices from the vacuum-sealed bag into a saucepan along with the sauce. Bring to a boil, season to taste (with salt, and possibly water or cream). Keep warm.
  4. Remove any strings from the roast. Heat in the oven for 15 minutes.
  5. Preheat oven to 190°C fan/convection (grill to 210°C indirect heat).
  6. Now let it crust for about 15 minutes.

Slice and serve. We recommend gratinated potatoes and beans with bacon as a side dish. Enjoy.
