The traditional speciality has been produced for over 200 years and dates back to Elector Karl Theodor, who brought his master butcher with him to Bavaria. He later developed the traditional sausage meat made from pork and beef, which is then put into a mold and baked in the oven.

Why is it called Leberkäse?

Contrary to the word meaning, Leberkäse contains neither cheese nor liver. This is why the traditional speciality is sold in Germany under the name Fleischkäse or Bavarian Leberkäse. Where the original name Leberkäse comes from is not entirely clear. One possible explanation is that the term is derived from the old German root words “Lab” and “Kasi”. Together they mean something like “edible loaf made of compact mass”.
Another possible explanation is that the term is derived from the shape of the loaf. Leberkäse is known for its characteristic patty shape, which is also somewhat reminiscent of a cheese loaf. In some regions, Leberkäse is also known as Fleischkäse.
