We only use heifers and ox meat. Never young bulls. Our cattle are slaughtered in the butcher's slaughterhouse in Fürth-Burgfarrnbach and come from farmers in the slaughterhouse's catchment area, mostly from the Nuremberg region. We sometimes even have personal contact with our fatteners in order to continually improve the quality of the meat and the way our animals are kept.

      Oxtail is an absolute highlight in braised dishes. But what's the best way to prepare this delicious cut of meat? Oxtail can be simply boiled to make a particularly delicious oxtail soup. Or braised for a tasty braised dish. These two preparation methods are best suited for oxtail.

      Oxtail from beef from our own butchery

      In our butcher shop, several cattle are butchered every week. This is important to us because it's the only way we can tell exactly where our meat comes from. It also allows us to properly complete the aging process. Most of our beef is wet-aged. What makes us unique is that we dry-age our animals for at least seven days after slaughter and before vacuum aging. This gives the rump a special flavor and makes it wonderfully tender. Please understand that we can only deliver a maximum of four whole oxtails each week.
