The Osnabrück Peace Ham is cut from the top and bottom sides, salted with sea salt, and aged and smoked on the bone for seven months using the Italian, very labor-intensive, long natural aging process. It is cut to size, boneless, and with only a small amount of rind remaining on the bottom side.
