What our experts say

Tip from our butcher

A good beef bratwurst needs time and patience when grilling – medium heat is the key to perfect flavor.

Pure Beef – Full of Flavor

Our beef bratwurst is made exclusively from high-quality beef – no pork, no additives. This not only makes it a distinct and flavorful alternative to the classic Franconian bratwurst but also the ideal choice for anyone who wants to consciously avoid pork. Filled in a natural sheep casing, it develops its characteristic bite and an intense meaty aroma when grilled and fried. Convinced? Then simply order online now – fresh from our butcher shop directly to your home.

Beef sausage for pan and grill

Our beef bratwurst is perfectly suited for any grill, whether charcoal, gas, or electric. Of course, it can also be fried on the stove in a good pan, submerged in fat – for this, we highly recommend Steber's clarified butter. The coarse beef bratwurst develops its spicy flavor best at medium heat. Due to its larger caliber, make sure that the temperature in the pan or on the grill is not too high – otherwise, the outside will burn while the inside is still raw. Therefore, always take the bratwurst out of the refrigerator in good time, as no fresh bratwurst likes to be thrown onto the grill ice-cold. A practical tip: Before frying, prick the sausage briefly so that it cooks evenly and doesn't burst.

For juicy results, a core temperature of 70–72 °C is recommended – this keeps the high-quality beef wonderfully tender. After arrival or collection, the bratwurst will keep for at least 1 day at a maximum of 6 °C. Combine the sausage with classic side dishes like sauerkraut or experiment with fruity chutneys for modern taste experiences.

Tradition Meets Modern Craftsmanship

In producing our beef bratwurst, we combine centuries-old Franconian recipes with contemporary quality standards. Each sausage is handmade from beef sourced from regional farms that we know personally – ensuring short transport routes, fair partnerships, and first-class quality. Spices like marjoram and caraway define the distinctive taste, and we utilize the whole animal – nothing goes to waste.

In addition to beef bratwurst, we offer a huge selection of sausage variations– from the Franconian Italian with wild garlic or red beer to seasonal barbecue creations. And for those familiar with "Bratwurstgehäck" – the filling in a pork casing – you'll know that with onions and freshly baked black bread, the "Gehäckigel" is a Franconian dinner highlight. You can conveniently order all our specialties online – freshly delivered to your home.

How to prepare Franconian Bratwurst properly

Frequently asked questions about beef bratwurst

The beef sausage needs about 12–15 minutes over medium heat. Turn it every 3–4 minutes so that it browns evenly. The sausage is done when it is golden brown on the outside and has reached an internal temperature of 70–72 °C.

Our coarse beef sausage is seasoned with marjoram, pepper, and table salt. This traditional spice blend gives the sausage its characteristic savory taste. We completely forgo flavor enhancers.

After arrival or collection, the beef bratwurst will keep for at least 1 day at a maximum of 6 °C – for optimal freshness, we recommend storing it between 0 and 4 °C. For longer shelf life, you can freeze it – then it will taste as freshly made even after several months. Before preparation, thaw slowly in the refrigerator and remove in good time so that it doesn't go on the grill ice-cold.

No, beef bratwurst must always be cooked through completely before consumption. The raw beef and ingredients are not suitable for direct consumption. Only by frying or grilling does the sausage become edible and develop its juicy texture.

The coarse variety has a more rustic texture with visible pieces of meat, while the fine bratwurst is more evenly ground. Both are spicy in flavor, but the coarse version offers more bite and a more intense meat aroma.

Classically, mustard goes perfectly with beef bratwurst, but horseradish or homemade chutneys also harmonize ideally. Sauerkraut, potato salad, or fresh bread are recommended as side dishes. When pan-frying, butter clarified butter is recommended – this gives the sausage a particularly nutty aroma.

Our high-quality beef bratwursts are traditionally filled into natural sheep casings. These give the sausage its characteristic bite and ensure an authentic taste experience when grilling or frying.

Bratwurstgehäck is the filling that goes into the pork casings. This Franconian staple tastes particularly good with onions and freshly baked black bread – what is known elsewhere as Mettigel (minced pork hedgehog) we call Gehäckigel (minced pork hedgehog) in Franconia.

sausage mince

The sausage mince is the filling that is stuffed into the pork loin. This Franconian staple food becomes a highlight at every evening meal with onions and freshly baked black bread. In Franconia, the Mettigel is called a minced hedgehog. As you can see, our Franconian sausage is not only delicious, but also very versatile.
