      wild boar fillet

      Wild boar is fortunately very rare or rather very clever here in Middle Franconia. Therefore, we don't always have wild boar, or rather, back fillet, on offer here. We butcher our wild boar ourselves. This allows us to always guarantee our customers impeccable quality and freshness. We also source our venison exclusively from Franconia. We work with hunters based here in Nuremberg.

      Wild boar fillet: extra tender and tasty

      Venison is one of the healthiest types of meat we can eat. The animals are raised in the wild and feed on it. The absence of animal transport and slaughter contributes to the very high quality of the meat. Therefore, we do not purchase venison from driven hunts, but exclusively from stand hunts. The back fillet of the wild boar is, along with the inner fillet, the most exquisite cut of the entire animal. It is particularly tender and, depending on the season, has a spicier (summer), fruitier (autumn), or milder (winter) flavor. Wild boars no longer have a closed season throughout the year; this only applies to young boars and wild boars that have escaped.
