Storage and preservation of salami from our own production

Raw sausage, in general, is one of the least problematic sausage products in terms of shelf life. This is due to two factors for all sausages. First, the addition of nitrite curing salt. The preservative nitrite reliably inhibits bacterial growth. Second, the relatively low aw value further guarantees good shelf life. Therefore, raw sausages are divided into two main groups.

Spreadable raw sausage

The spreadable raw sausages are not intended for immediate consumption, but also not for long-term storage.Guidelines for meat and meat products.
