The perfect Teres Major steak: tender and full of flavor

Teres Major Grilled Steak: A tender butcher's cut with intense flavor! A true insider tip from the butcher. Order this flat fillet of beef now and grill it to perfection!

Teres Major – The tender shoulder fillet

The Teres Major is a lesser-known but extremely tasty butcher's cut, which comes from the rarely used muscle below the shoulder blade at the rear of the beef shoulder. Often mistaken for the fillet, it is particularly tender and juicy, making it an insider tip among meat lovers. This cut is ideal for pan-frying or grilling Teres Major steaks. Cooked at a temperature of around 56°C, it develops an intense flavor and remains beautifully tender. It can be cut into medallions and cooked on both sides for a truly delicious meal. The Petite Tender is another example of the most tender cuts of beef and is often referred to as a delicious burger joint. Cutting the meat across the grain further enhances its tenderness. It is ideally seasoned with garlic and pepper and, when combined with a short aging period, can be used as a perfect grilled dish. With the right cut and preparation at low temperatures, the Teres Major becomes the highlight of every BBQ and a real treat for all meat lovers

How to perfectly prepare a Teres Major steak

Grilling the Teres Major Steak is an art that pays off if you want to enjoy a tender and flavorful piece of meat. This butcher's cut, known as the petit tender, comes from the beef shoulder and is part of the thick brisket. To prepare the perfect medium-rare steak, first bring the meat to room temperature and then season it well. After seasoning, preheat the grill to high. Grill the flat fillet for about 10 minutes, searing it on both sides to intensify the roasted flavors. Make sure to turn the steak regularly to ensure even cooking. The result is a delicacy with an intense beef flavor that will enhance any barbecue. To bring out the full flavor of this cut, the right side dishes are crucial. As an alternative to traditional sides like potatoes or rice, serve seasonal vegetables like green beans or grilled zucchini to add a fresh touch to the dish. Another great accompaniment is salads dressed with a spicy dressing. These side dishes not only harmonize with the Teres Major, but also bring the flavors of the side dishes into harmony with the tender meat.
