Freyberger's ham red sausage "Thuringian style"

Thuringian ham red sausage, or products from Thuringia, are subject to the regulation for geographically protected indications (PGI). This means our ham red sausage is not an original Thuringian ham blood sausage, as it is not produced in Thuringia, but rather at our headquarters in Nuremberg's Sperberstrasse. However, our lean black pudding is in no way inferior to the original. A mixture of blood and pork rind seasoned with pepper, mace, and marjoram, with a delicious lean pork ham filling, that's what sets our homemade black pudding specialty apart.

What makes a ham red sausage or ham blood sausage so special

First and foremost, it's a blood sausage or red pudding. Like any other sausage of this type, the sausage mixture consists of freshly beaten blood, cooked, finely chopped pork rind, and a bit of meat broth. This is seasoned with a spice blend with strong marjoram and pepper notes. But the ham red sausage or ham blood sausage makes it special. Lean pieces of pork ham, about the size of a cherry stone, form the filling in the blood and rind mixture and shape the distinctive appearance of this artisanal food.
