We source our pork from the Nuremberg metropolitan region. To ensure the best possible quality and guarantee of origin, we slaughter our pigs at our uncle Hans Rössner's in Uehlfeld. He sources the pigs from farmers in his immediate area.

The population of wild boars native to Middle Franconia is relatively small. We therefore only offer the meat seasonally, but we can especially recommend our wild boar leg. We work with hunters based in Nuremberg, but that is not enough for us. We regularly drive to the game chambers in the Grafenwöhr region to get a larger amount of game. Wild boar leg as a noble roast

Game is one of the healthiest types of meat, as wild animals have enough space to roam and feed on what nature provides. This is also evident in the unique taste of the fine meat. That is why we do not buy game from driven hunts, but only from stand hunts. The wild boar leg is a particularly good roast cut of wild boar, along with the shoulder or shoulder of pork. It is very easy to prepare as a roast and tastes spicier (summer), fruitier (autumn) or milder (winter) depending on the season.
