An original Japanese Wagyu steak is one of the most exclusive meats in the world. The intense marbling, distinctive taste, and buttery tenderness make Wagyu a special treat. At the same time, many people ask: How do you properly prepare a Wagyu steak? Does it absolutely have to be pan-fried, or can an air fryer also deliver?
As Freyberger Butchery, we investigated this very question. And we did it with an experiment that many steak lovers would probably call daring. You can find the video here.
We're testing €500 Wagyu beef
For our test, we used a high-quality Japanese Wagyu steak and prepared it in two completely different ways.
First, our master butcher demonstrates step-by-step how to classic pan-fry a Wagyu steak. Afterwards, the same steak goes into the air fryer, in three different preparation variations.
In the end, all results are directly compared and expertly evaluated.

Why is Wagyu so special?
The term Wagyu simply translates to "Japanese cow." However, Wagyu became world-renowned for its exceptional meat quality.
Typical characteristics are:
- extremely fine fat marbling
- intense, nutty-buttery flavor
- exceptional tenderness
- high content of unsaturated fatty acids
A5 Wagyu from Japan, in particular, is considered the highest quality grade and is one of the most expensive meats available. This is precisely why proper preparation is crucial. You can find out more about husbandry here.

Properly preparing Wagyu steak
When preparing a high-quality Wagyu steak, some basic rules should be observed:
- Bring the steak to room temperature in good time.
- Use a very hot pan.
- Sear briefly to preserve the fine marbling.
- Do not overpower the meat with too many spices – high-quality salt is often sufficient.
- Let it rest for a few minutes after frying.

Can you cook Wagyu in an air fryer?
More and more home cooks are using an air fryer for meat and steaks. These appliances promise simple preparation and consistent results.
But does that also work for a steak that costs several hundred euros?
That's exactly what we wanted to find out. That's why we tried three different air fryer methods and directly compared them with classic pan-frying.
We won't reveal in advance whether the air fryer performs surprisingly well or if the Wagyu is actually "ruined" in it. You can see the result in the video.

Whether it's Dry Aged Beef, US Beef, or Japanese Wagyu, high-quality meat only fully develops its flavor when prepared correctly.
