What is a capon?
A capon is a castrated free-range rooster that comes from certain old breeds such as the naked-necked chicken. Thanks to castration, capons focus on eating and therefore eat more than normal roosters. As the fattening process progresses, a capon rooster puts on a lot of fat, which later contributes significantly to its taste.

How do I prepare capons?
The capon rooster is particularly well-known as a classic Christmas roast - as capon de Bresse. It is stuffed and cooked in the oven. A capon label rouge also makes a good braised dish. We definitely recommend trying out different recipes. It's worth it!

Are capons always available?
No, if you want to buy a capon, this is only possible at certain times. Capons come onto the market from the last week of November. They are then available until New Year's Eve. A capon rooster therefore only has a relatively short season. If you want to buy a capon from Freyberger for Christmas, make sure you pre-order it before the first Advent.

Buy capon - This is what Label Rouge stands for

The Label Rouge is a state seal of quality originating from France. Poultry such as the capon must therefore meet certain standards in order to receive it. For example, it is mandatory to have a slow-growing meat breed that produces particularly high-quality meat. Furthermore, the animals are free-range and fed with at least 70 to 80 percent grain. Slaughtering only takes place after sexual maturity has begun. The animals are then at least 81 days old and are therefore raised for a good twice as long as "conventional" poultry. A Label Rouge capon does not only owe its seal to the animal husbandry. Certain standards also apply with regard to consumers. This includes strict controls and quality standards.

If you want to buy a capon, you have the choice. During the Christmas season we offer the following variants: capon from white chicken, corn-fed chicken, black-footed chicken and guinea fowl. It all depends on how you want to prepare your capon. Black-footed chicken, for example, is ideal for braised dishes. Corn-fed chicken, on the other hand, makes the perfect roast chicken. Do you want to play it safe and keep several options open when preparing it? Then go for white chicken.
