      Pork belly can be prepared as a delicious roast, among other dishes. We recommend cooking the pork belly very slowly. Braised pork is particularly tender. It can also be perfectly prepared in a smoker or on a gas grill. You can tell when it's cooked to the right degree by the internal temperature.       Recipe: Roast pork

      Ingredients:

      • 1 kg pork belly
      • 500 ml broth
      • 0.5 tsp powdered sugar
      • 1 tbsp tomato paste
      • 150 ml red wine
      • 2 onions * 2 carrots
      • 1 tbsp oil
      • 1 tsp cornstarch
      • Salt
      • pepper

      Preparation:

      1. Preheat the oven to 130 degrees Celsius (265 degrees Fahrenheit). Add 300 ml of stock and the pork belly, rind-side down, to the roasting pan. Place it on the middle rack of the oven for about 60 minutes.
      2. After 60 minutes, remove the meat from the roasting pan and score the rind with a sharp knife. Return the roasting pan to the oven and increase the temperature to 160 degrees Celsius.
      3. Now clean the vegetables and thinly slice the onions. Thinly slice the carrots as well. Sauté the onions and vegetables in a little oil in a pan. Add the powdered sugar and tomato paste and stir them in. Sauté for a while, then deglaze with the red wine.
      4. Remove the roasting pan from the oven and remove the pork belly. Distribute the vegetables evenly and place the pork belly back on top. Return the roasting pan to the oven for another 90 minutes at 230 degrees Celsius. After about 20 minutes, a crust should have formed, and the roast can be removed from the oven.

      Let the roast rest for about 10 minutes before slicing. Pour the meat juices through a sieve into a saucepan. Thicken the remaining gravy with flour and butter, season to taste, and you're done!
