Freyberger presents Bacon Berliners

Especially during Carnival season, there's a pastry that's unbeatable in popularity. Cakes, tortes, and other sweet indulgences take a back seat. But what exactly is the round pastry with the red filling called? Krapfen, Berliner, or is it a Pfannkuchen? At Freyberger Butcher Shop, the name doesn't matter. However, the contents get an upgrade.

The slightly different filling

"Do doughnuts always have to be sweet?" Dirk Freyberger asks himself one morning. The answer he comes up with: "No." The master butcher has worked on a similar combination in the past. During last year's Advent season, the Nuremberg native invented the "Three in Lebkuchen" (a combination of Nuremberg bratwurst and gingerbread). He's intrigued by this meaty treat. "We've already made a burger from a doughnut ," the meat sommelier replies. The doughnut burger was the spark for this idea.

The Freyberger butcher shop offers Bacon Jam . Contrary to its English name, it's not jam, but a bacon spread. This spread is perfect as an addition to a burger or, of course, to all kinds of baked goods, including doughnuts .

"I immediately got some doughnut blanks and filled them with our bacon jam ," explains Freyberger. Instead of jam, the carnival specialty now contains bacon jam . "Fried dough and bacon —you can't go wrong with that," says the butcher. However, the icing on the cake is still missing—literally: the topping.

Smoky-sweet - only for a short time 

Bakers usually sprinkle their doughnuts with sugar. Freyberger Butcher Shop adheres to this tradition, but still adds their own personal touch. The Nuremberg-based company creates its own smoked sugar: brown sugar that the butchers smoke themselves. "The smoky-sweet flavor perfectly complements our bacon jam ," promises the food artist. 

The bacon jam doughnuts will be available from February 27th to March 3rd of this year. However, they are only available for pickup at the Freyberger butcher shop branches, namely those at Sperberstrasse 99 and Katzwanger Hauptstrasse 40. Customers must also pre-order the bacon pastries . This can be done in person, by phone, by email, or via the butcher shop's online shop. Videos of the pastries for customers will follow on the Freybergers' social media channels . 

The butchers are curious to see who dares to take on this curiosity , but "anyone who doesn't do something crazy at Carnival must really be crazy," claims Dirk.
