The Saxon Bratwurst is also known as Knacker or Berlin Knackwurst. It is a raw sausage made from lean pork and beef with pork belly without rind. The sausage mixture consists of medium-grain, minced pork belly and a portion of finely ground meat. It is seasoned with nitrite curing salt (which gives the sausage its red color), pepper, and mustard seeds. The sausages are then cold-smoked in pork casings. We prepare them fresh for you every day!
