World Butchers Championship in Paris
The WBC will take place in Paris on March 30 and 31, 2025. Over 10,000 spectators will watch 16 nations from all over the world compete. In 3.5 hours, the participants must transform half a cow , half a pig , a whole lamb , and five chickens into ready-to-eat products and present them on a themed display. All the meat will be used and donated to aid organizations. "We have been preparing intensively for this for several years," explains Dirk Freyberger.

Dirk is competing with the Butcher Wolfpack . Together, they represent Germany. The criteria: sustainable use of meat, creativity, technique, and compliance with hygiene and safety regulations. "The training was very tough and demanded an incredible amount of us," reveals the meat sommelier.
Preparing for the championship takes a lot of Freyberger's time and resources. There's no payment for this. The master butcher has to provide the financial resources, labor, and materials himself. "Everyone on the team does this voluntarily, alongside their regular jobs," the team captain replies.

In addition to the title of World Champion, there are also categories for the best sausage and meat products as well as a special prize for social skills to be won.
The special award includes the following criteria: sustainability, team dynamics, diversity, fairness, economic efficiency, environmental awareness, and health and safety aspects. In addition, selected participants receive the special honor of securing a spot on the All-Star Team (the WBC Hall of Fame).
