festive feast at Christmas time

The roast goose

Roast goose is almost as much a part of the Christmas season as presents and the Christmas tree. It's a good tradition to celebrate the festivities with a hearty feast – and a delicious roast goose is a perfect match. This roast is often served with red cabbage, dumplings, and other goodies. The big advantage: You can reliably feed even a large number of guests with such a roast.

How do you prepare a roast goose?

How you prepare the roast goose is entirely up to your personal taste. You can use individual parts of the goose or the whole piece of meat. The former is recommended if you're not expecting many guests. For all other festivities, a large roast goose is not only a guarantee of great taste—it's also a feast for the eyes. If you like, you can even use any part of the goose to create something edible. Delicious seasoning gives the roast goose its typical flavor. It's usually rubbed with marjoram and a little caraway, pepper, and salt added. The goose is stuffed with apples, onions, or a variety of other ingredients.

Why a free-range goose?

A free-range goose offers significant advantages over geese from factory farms. With a free-range goose, you can be sure that the bird has had ample opportunity to roam freely during its life. Furthermore, a free-range goose benefits from natural feeding. You can taste this in the meat, too.

Differences to fattening geese

In some EU countries, the forced fattening and plucking of live geese is still permitted and widespread - free-range geese are far removed from such husbandry practices.
