Refining the hams
The Qualivo pork ham cuts from the underside and rump are rubbed by hand with a special sea salt and herb blend. The Black Forest hams are then aged in large barrels for several weeks. After this initial stage, the Black Forest ham is dried and repeatedly gently cold smoked over spruce and fir wood.
