Our corn-fed chicken, for example, is perfect for searing in its own fat and serving with a pinch of salt. This allows its unique aroma to develop perfectly, making the poultry taste wonderfully tender. Our guinea fowl, on the other hand, goes very well with fruits like pears and roasted in a pan. Those who prefer something a little more exotic should choose a capon at Christmas time. This is a specially bred, castrated rooster. It makes an excellent roast for Christmas.
