Origin of Wagyu beef and its importance in Japan

Wagyu cattle originate from Japan and are among the most famous cattle in the world. The name "Wagyu" translates as "Japanese cattle." The animals have been bred on the island for over 1,000 years and for a long time were found exclusively there. The exceptionally tender and juicy meat of Wagyu cattle is prized worldwide and commands a correspondingly high price. In its homeland, Wagyu cattle are primarily used in traditional dishes such as sukiyaki and shabu-shabu. The high quality of the meat is achieved through special rearing methods, in which the animals are fed grass, silage, hay, and straw, among other diets. Wagyu has great cultural significance. Annual competitions are held on the island to find and award the best Wagyu prefecture and Wagyu.

Frequently Asked Questions about Wagyu Beef

The defining characteristic is the unique marbling of the muscle meat. This fine fat distribution ensures incomparable tenderness and intense flavor – Wagyu is considered the best meat in the world for a reason.

The prices for Wagyu beef vary significantly depending on the cut and quality. Here you'll find Wagyu beef ranging from affordable burger patties for smaller budgets to exclusive Tomahawk steaks in the higher price segment – the perfect selection for every occasion and every budget.

The best accompaniments for Wagyu are simple, high-quality side dishes that highlight the fine inherent flavour of the meat without overpowering it. Creamy mashed potatoes, crispy fried potatoes, or a delicate potato gratin are particularly popular. Grilled or lightly pan-fried vegetables such as green asparagus, courgettes, broccolini, or carrots also harmonise excellently. For a fresh note, a simple green salad or a tomato carpaccio with good olive oil are suitable. Less is more here – ensuring Wagyu remains the clear star on the plate.

Wagyu cattle are bred for years under the highest standards and kept in a species-appropriate manner. The elaborate breeding, special genetics, and long rearing period until optimal marbling justify the premium price of this delicacy.

Kobe is a special form of Wagyu from the Kobe region of Japan. While all Kobe cattle are Wagyu, not all Wagyu comes from Kobe – our fullblood Wagyu herd from Miyazaki is in no way inferior to the legendary Kobe Beef.

Due to its high fat content, Wagyu beef requires only short cooking times.

First, let the meat rest at room temperature for 30 minutes, then sear it for 1–2 minutes per side, finish cooking it at a lower temperature, and let it rest again for about 5 minutes before serving.
