Origin

We only use heifers and ox meat. Never young bulls. Our cattle are slaughtered in the butcher's slaughterhouse in Fürth-Burgfarrnbach and come from farmers in the slaughterhouse's catchment area, mostly from the Nuremberg region. We sometimes even have personal contact with our fatteners in order to continually improve the quality of the meat and the way our animals are kept.

      Roast beef is a classic of German cuisine. But how is it best prepared? We recommend using our beef gravy and braising or roasting it. It's best to prepare beef gravy in a roasting pan with clarified butter and fry it until golden brown on all sides. Then add onions and pour meat broth over the roast.       Beef nut from our own butchery

      In our butcher shop, several cattle are butchered every week. This is important to us because it's the only way we can tell exactly where our meat comes from and allows us to control the entire aging process on-site. Our beef is wet-aged. What's special about us is that we dry-age our animals for at least seven days after slaughter and before vacuum aging. This gives the beef a unique meaty flavor and makes it wonderfully tender.
