We only use heifers and ox meat. Never young bulls. Our cattle are slaughtered in the butcher's slaughterhouse in Fürth-Burgfarrnbach and come from farmers in the slaughterhouse's catchment area, mostly from the Nuremberg region. We sometimes even have personal contact with our fatteners in order to continually improve the quality of the meat and the way our animals are kept.

      Braising, boiling or frying?

      In our butcher shop, several cattle are butchered every week. This is important to us. It's the only way we can tell exactly where our meat comes from. And it allows us to properly complete the entire aging process. This is how most of our beef is dry-aged. But what's special about us is that we dry-age our animals for at least seven days after slaughter and before vacuum-aging. This gives the roulades a special meat flavor and makes them tender.
