Ham - which piece would you like?

Ham is usually made from pork and often comes from the leg. It is then referred to as a hind ham. If the meat comes from the shoulder, however, it is called a fore ham. For those who prefer particularly tender meat, we recommend our salmon ham, which is taken from the pork loin and, of course, handcrafted by us. But it doesn't always have to be pork: beef ham is becoming increasingly popular and is primarily made from the leg of beef. The following cuts from the leg of beef are typically used: the tail roll, bresaola (beef rump), and pastrami (beef brisket). The other cuts are then processed into other products, such as boiled beef or steak. This ensures that nothing is wasted and we can create truly delicious meat from every part of the animal for your enjoyment.

Ham - what types are there?

There are many different types of ham. How about the finest Serrano ham, for example, which originally comes from Spain and, after salting, is then air-dried for months. This gives it its distinctive flavor? Another variety is salmon ham: This is cut from the loin of pork, then cured and finally smoked. Ibérico ham is also popular: Like Serrano ham, it comes from Spain and is made from pork. The animals used to make this ham are fed primarily acorns. Black Forest ham can only be produced in the Black Forest, has a dark color and a strong smoky aroma. Of course, there is also the classic cooked ham, such as our juniper ham, or ham for cold cuts, such as beer ham. One important product, however, cannot be left out of this list: Parma ham. Parma ham comes from Italy and is an air-dried, lightly cured raw ham. It is made from the leg of the pig. First, it's important that the meat is sliced ​​as thinly as possible to achieve a balanced ratio of red muscle and white fat. Ham generally pairs well with red wine, olives, and fresh bread. Whether you simply place the ham slices on the bread or eat the ham in pieces with the bread is up to you and your preferences. For example, we recommend placing Serrano ham and Ibérico ham on burgers as a bacon substitute and topping them with cheese. Cooked ham is wonderful in casseroles and as a cold cut. A ham vacuum-packed and sliced ​​by us can be easily stored in the refrigerator at approximately 0 degrees Celsius for up to three weeks. After opening, the ham should be completely removed from the packaging to keep it fresh. Instead, store it in an airtight box, for example. It's important that the cold chain isn't interrupted for too long. If the product is regularly left out of the refrigerator for several hours, for example, this will affect its shelf life.
